WHAT YOU WILL NEED

Dripper (Bee House Dripper)
Server or your favorite cup
#4 Filter

BREW TIME

2.5-3 minutes

STEP 1

Bring water to a boil in your kettle, about 500 g.

STEP 2

Weigh out 25 g of coffee on your scale.

STEP 3

Grind coffee slightly finer than sea salt.

STEP 4

Fold the seams of the paper filter and place into the dripper.

STEP 5

Once the water begins to boil, or reaches 205 degrees, pour hot water through the filter to fully saturate it and pre-heat the dripper and server. After water has drained through the filter, empty the cup or server. If using a server, pour the hot water from the server into your coffee mug to pre-heat it.

STEP 6

Pour the ground coffee into the filter and gently shake the dripper to even the grounds.

STEP 7

Starting in the center, gently pour about 50 g of water to fully saturate the grounds. Work your way outward and avoid pouring directly on the sides of the filter. This first pour of water causes the coffee to "bloom" and release it's initial gasses. Allow the coffee to bloom for about 30-60 seconds, depending on the freshness of the coffee.

STEP 8

Continue pouring into the center of the coffee grounds, in a circular motion. Pour slowly, ensuring all the grounds are evenly saturated. The whole brew process should take between two and a half to three minutes. Continue pouring until you reach 350 g of water.
